Default Lemon Cookies - YUMMERS!

So I bought these raw lemon cookies the other day, and as usual I thought, "I can do that!"

Here's my recipe! Tweak it to fit your tastes.

1 cup raw cashew pieces
3/4 to 1 cup dried (or fresh) grated coconut (not the creme, the solid)
The juice (no seeds!) of one medium lemon
1 tblsp honey (taste, then add more if you must - but be careful. More honey means they won't be as solid, although they'll still taste great)

Ok.. so first you put the cashews in the food processor and process them until they're ground pretty fine.

Then add the coconut to it and process again.

Then add the lemon juice and honey. Process again. It should ball up. If not, add a TINY bit of water, just enough to make it ball up.

Taste it. Remember, as you dehydrate, it will get a bit sweeter and tarter. If it's ok, then make little balls and press them into cookie shape. I put them directly on the screen, with no teflex.

Dehydrate over night or until dry enought to take off without breaking.

These were FANTASTIC!

Default Lemon Cookies Cost

I forgot to add.
The cost of the store-bought raw cookies was $5.89 for 10 cookies.
I made the recipe for $2.50 and there were 14 cookies!
And it only took about 5 minutes to whip up.

This sounds very similar to the lemon chew recipe someone else posted. But it also contains lemon zest and I think agave instead of honey. I use very little sweetener in mine and a ton of zest because I like them tart. Good with limes too.

FYI... that post from Rowan is about a year old LOL... I thought the same thing about the lemon cookies and then looked at the date and realized that this was an ooooold thread.

I know this is a really old thread but I just made these cookies and they are divine!

I absolutely love how simple the recipe is...only four ingredients!

Old threads can have very good recipes! I have made several different lemon cookies and I love them. Alissa has one in her book that is very differen, but sounds very good. It has poppy seeds - yum!

Just got that batch into the dehydrator - this is so-o easy to make, and would be great for holidays or any occasion where you want to impress the folks and friends. I had a hard time keeping my mitts out of the mix once I processed it up - LOL! I got 20 cookies out of this, since I thought with the richness the cookies should be on the small side, but that's just me. Will keep you posted, especially when DH the official raw dessert taste tester weighs in with his verdict. So far he's loved everything I've made, even though he isn't really raw(but he's getting up there).

I made this recipe today, too. I didn't keep my mitts off them. I got 16 cookies out of the batch, but there are only 12 in the dehydrator. I'm calling it lunch.

I added 1/4 teaspoon of vanilla extract and a pinch of pink salt. Processed the cashews fine, add the rest and processed until it was almost smooth.

This recipe is a keeper.

You don't have to dehydrate them. Make balls and roll in more coconut, and keep in the fridge or freezer.
